One kitchen, three rooms, a short menu
There is a single kitchen at Solace and it cooks for everyone — the long breakfast table, the restaurant in the old olive store, and the lounge where the fire is lit from October.
The menu is short because the garden is small. What the terraces and the coast give us on a Tuesday is what you eat on a Tuesday.
01The restaurant
Cardo
Cardo occupies the old olive store: one long room with a stone floor, twelve tables and a fire at the far end. The menu runs to five or six dishes a night and changes when the garden changes.
Dinner is open to guests staying in the house and to a small number of outside tables, which we hold back until the afternoon.

02Breakfast
The long table
Breakfast is laid on one chestnut table in the courtyard, or inside by the window when the weather turns. Bread from the wood oven, fruit from the terraces, eggs from the village, yoghurt, honey, good coffee.
Nothing is timed and nothing is cleared while you are still sitting there. If you would rather eat in your room or on your own terrace, say so the night before.

03Once a week
The seasonal dinner
One night a week the restaurant does something longer: a set dinner of eight small courses built around whatever is at its very short peak — asparagus in April, tomatoes in August, the first oil in November.
Everyone sits down at the same time. It runs to about three hours and there is no menu on the table until the end, when we write out what you ate.

04Bar and lounge
The lantern lounge
The room next to the entrance hall, with low chairs, the better part of the house library and a small bar that runs on vermouth, valley wine and one very good gin from the coast.
In winter the fire is lit at five. In summer the lounge spills out onto the north terrace, which stays cool long after the rest of the house has given up.

In the kitchen
We cook what arrived this morning
The garden runs along four terraces below the house and supplies most of what appears on the plate between April and October. What it cannot give us comes from within an hour: fish landed at Puerto Aldena, cheese from the farm at the head of the valley, flour from a mill two villages over.
The consequence is a short menu and occasional disappointment — we run out of things. We think that is the honest version of cooking from a garden, and we would rather write a new menu at four in the afternoon than order in something to fill a gap.
Every dietary requirement is genuinely fine. Tell us when you book and the kitchen will build around it rather than subtract from it.
